Best Russian Cooking
A James Beard Award-winning writer captures life under the Red socialist banner in this wildly inventive, tragicomic memoir of feasts, famines, and three generations Born in 1963, in an era of bread shortages, Anya grew up in a communal Moscow apartment where eighteen families shared one kitchen. When I started my career in the early 90s, after emigrating in the 70’s, the Soviet drama of putting food on the table was still fresh. Whenever I ate at a fancy restaurant for my work, I felt pangs of guilt about all my family struggling back in Moscow. Over time Russia became a wealthy country, but I continued to be haunted by a sense that behind everything I ate professionally lay another reality: a shadow of our collective Soviet trauma. My mother has an almost uncanny recall of her emotional life, starting from her earliest childhood—back when she was an alienated sensitive kid in the totalitarian frenzies under Stalin. Even oligarchs are pining for the mayonnaise-laden salads and kotleti (Russian burgers) of our shared, vanished socialist childhoods. The pioneering Bolsheviks of the 1920s wanted to liberate women from domestic chores—and so both my grandmothers were lousy cooks! But the Bolshevik feminist project failed, and by the next decade, under Stalin, Soviet women got stuck where they remained—carrying the infamous “double-burden” of a job and housework. In a society with so much cultural control, some women of my mother's early 60’s generation found personal self-expression in cooking. Now with the avalanche of chichi prepared food at Russian supermarkets, cooking is strictly a matter of choice. When we completely ran out money Mom would make fried eggs over stale black bread cubes. Each chapter of the book has us obsessing about something different—a new “project.” The sumptuous kulebiaka from the pages of our beloved Chekhov drove us crazy but turned out incredibly. Chanakhi , a Georgian lamb stew with tons of herbs (Stalin's favorite dish incidentally) is something we cook a lot.

"Anya Von Bremzen's trip through the history of the Soviet Union using food as her guide is supplemented by her memories and her family's experiences."
"It is an inside look at communist food culture and how it was dominated by the "collective" system."
"Even if I had not had that connection, I would still have found Von Bremzen's book beautifully written, reaching from luscious food imagery to chilling testimonials about life in Stalin's Moscow."
"Importantly, with food and family as the centralizing thing, von Bremzen is able to sublimate abstract Soviet history and policy changes into narratives that are accessible and relatable to any reader."
"I was especially affected by Von Bremzen's reaction to our overwhelming supermarkets and bland American bread after she and her mother immigrated to the United States."
"It is a fascinating memoir to read even if you are not a foodie or student of Russian history."
"An extraordinary talent Anya Von Bremzen has in guide you intensively and passionately through a journey which unfolds the pages of of life during the Soviet era and making the present more readable."

Find Best Price at Amazon"When Ina says "foolproof" she doesn't mean a recipe has only five ingredients or that it has only three steps. Ina means she has an ingredient list with easily obtainable ingredients and steps that appeal to your common sense so that you don't worry about whether the recipe will turn out. She finishes the book with a foolproof index of menus for special occasions which cross references with special dishes from all of her cookbooks. She does repeat foolproof recipes from her previous books such as her standard chicken stock, but the book is mostly comprised of new material. I have been using her roasted carrot recipe for over a year now and am delighted to see that she has mixed it up with a recipe for braised carrots and parsnips. She presents a mashed chickpea recipe that is yummy."

"The one problem I had was in step #4 he stated to perform a quick release, in which I did and ended up with juices spewing out the top of my pressure cooker all over my walls and cupboards. I was terrified to use the quick release method again until I read some posts on a pressure cooking forum on how to do it correctly."
"The recipes are written for using a pressure cooker, but I'd guess one could also adjust time and use the ingredients to slow braise or use a crock pot to make these meals. I bought this book to use with the Instant Pot Pressure Cooker and it delivers in both quality and ease of following written instructions."
"One of the recipes that I made from Great Food Fast, Pizza Style Chicken with Pepperoni and Mozzarella Cheese, could have been cooked in the oven for about the same amount of time it took following the recipe. The recipe called for browning the floured chicken in the PC, pressure cooking with pasta sauce and green peppers for 8 minutes, meanwhile also boiling water and cooking the pasta. Oh well, it would be a great recipe for someone who doesn't have an oven - just add the pepperoni and cheese after the pressure has been released and let it melt. Bob's first electric pressure cooker cookbook Slow Food Fast: Over 120 Quick and Hearty Pressure Cooker Recipes is also really good."
"Ive cooked only a few recipes from this book, but how many meh results should one get before he/she says--these recipes aren't very good and they taste very similar one to another."

"When it comes to liquids and cooking things like rice and noodles you do need to follow the measurements and directions pretty close. To counter points in some other reviews, yes some recipies require you to microwave ingredients before adding them into the "one pan" but they do mention this in the introduction to the book, so that shouldn't come as a surprise. Also if you've ever used any Americas Test Kitchen/Cooks Country books, this is a common enough technique they recommend, and I have found has made my life easier as a cook!"
