For years I've used Yoki both Polvilho Doce - (Sweet) and Azedo (sour) as this was the way I learned whilst living in southern Brazil. When I had a difficult time finding these products (my local Brazilian store downsized their inventory), I found this at a whole foods retailer. Tapioca flour and Pão de Queijo was the only bread we could eat until I started getting better ideas from a fitness board. If one is trying to drop processed flours, wheat or gluten, or become "low carb" this stuff comes in really handy. The texture of the cookie in my hand was normal, the color was great, they smelled like regular cookies and the baking time was the same. Although I still need to try more recipes, I can almost promise you that you will not be able to distinguish this flour from regular flour in your recipes. The only caveat is that you may need to add extra liquid, eggs or fat to your recipes, as this flour tends to be a bit drier, absorbent and "thirsty."
