It seems like some people on Keto have experienced sugar spike (high GI) after eating this, but I don’t have this issue. FYI: Here is how you CALCULATE NET CARB: Total carb - fiber - sugar alcohols (or natural low-carb sweetener like Stevia, pure Monk Fruit sweetener, etc). Quick Update: I just baked a Know Chocolate Chip Cookie at 325 degree for 7 mins in my toaster oven, I let it cool for a bit and the edge became crispy and the body became chewy."
