"Comparing the color of the two - see picture- I am leaning towards raw (dutched cocoa powder has a red undertone to it). I don't tend to bake or make sweets, I usually add the powder straight to drinks, so I am not a good judge there. I plan to use the rest of it in smoothies as that is where it seemed to shine, and use my other cocoas in my chocolate milk and coffees. I place this somewhere between "I like it" and "it's OK." Update: Apparently I read everything but their detailed description and answered question on Amazon. It was very good, but that just backs up my original point - this needs to be mixed in with other ingredients to shine. 5 stars are specifically reserved for products that amaze me, are exceptionally high quality, or work perfectly.
