In my reading, I considered ways to approach strengthening my immune system and internal health and it was here I first learned about Kombucha. As delicious and health infusing as it was, it also was becoming a noticeable expense at over $100 a month in additional grocery bills for just one item. I watched some videos about making your own Kombucha and coincidently, about that time, Amazon offered this Kit in their Deals at half off. I thought, well, that price represents just 6 bottles of my grocery store purchases and less than just one batch of making my own, so let's give it a try. The Kit has everything you need minus the large glass fermentation container, which I picked up at a local housewares store. Basically, the Kit contains a generous supply of loose tea for brewing multiple batches. After the water comes to a boil, remove it from the heat and put in your tea; about 2 tablespoons for my quantity of water.The Kit does supply small burlap type pouches to contain the loose tea, but I quickly opted for a large steel ball container I bought separately on Amazon as well. The sugar isn't to make sweet tea, but will be the food the bacteria will consume as they multiply and produce the fermentation. Transfer the tea into your glass fermentation jar and add the supplied SCOBY along with the starter Kombucha. Since these smaller bottles will be sealed and gas cannot escape, you should obtain additional carbonation to equal what you buy commercially. I actually bought a second kit because I have been producing so much Kombucha and giving it to friends, though since you'll be knee deep in Scobys after a few months that I really only needed the original purchase."

Find Best Price at Amazon"I considered using the standard air locks (the ones that use water), but I noticed they can be messy. During the first stages, the gas(CO2) created by the bacteria will push the oxygen out of the jar pretty quickly. When you DO want to use the pump is toward the end of your ferment, (when bacteria have slowed their growth and metabolizing), and you open your jars to do taste tests. If you decide to let your ferment go longer, then you'll use the air pump to pull the oxygen out, since it wont be pushed out as fast as it will in the beginning."
"I had 9 lids from three orders of the kit last fall and gifted one, and a pump, to a friend wanting to try fermenting. Every single ferment I have created since last summer has been successful except, sadly, on half-gallon jar of dill pickles this winter. I discovered that when I had tasted one of the smaller "taster pickles" I put at the top of the ferment, I had neglected to skim any loose pickling spices off the brine before I replaced the lid. UPDATE: 8/28 I just ordered another set Fermenter Lids, and am thinking of one more order to make 12 caps. I had purchased two sets for six jars, and fermented a half-gallon of whole medium-sized sour dill pickles, a half gallon of spicy asparagus, a quart of red cabbage kimchi, a quart of saurkraut (still fermenting), and two quarts of big cucumbers sliced into spears. I made my own pickling spices, along with fresh dill and garlic cloves, and used grape leaves in the jars to provide the tannins recommended for crispness, and they are delicious! I took off the fermenter caps, capped the jars with wide-mouth plastic lids (not too tightly), and they are all in my downstairs refrigerator chilling. It probably should have fermented in the basement longer, to get the full flavors (I was too impatient) but it will continue to ferment slowly in the refrigerator."
"I switch off the lids when I put my ferment into cold storage, but you could just as well keep the Easy Fermenter lid on when you put it in the fridge. Even if you fill your jar a bit too full (as I did with one of these), the brine bubbles through a teensy hole in the silicone "airlock", which is easy to remove and wash - I've had beer foam up and bubble out of one of the three-piece airlocks and you have to scrub each piece in order to prevent contamination of your next batch. With the Easy Fermenter it's easy to stick your jar in the cabinet and out of your way during fermentation. I'm not throwing my other airlocks and lids away, but will only use them if my Easy Fermenter lids are already in use."
