Find Best Price at Amazon"There is an absolutely gorgeous introduction chapter called appropriately The Soul of Pizza, and for the first time when reading a cookbook I found myself immersed in a wonderful story of pizza and the regions of Italy that take pizza to levels of yummy perfection. Ken Forkish does an amazing job of capturing the beauty of the Italian country (amazing amazing photography wow), and the skill and dedication of pizza artisans there who have been perfecting their skill for generations with loving dedication. Instead of finding a bunch of pizza recipes attached to a couple dough recipes, as in most recipe books, I discovered in this book a whole chapter talking about nothing but dough. And by that I mean to say there are 12 different pizza dough recipes plus one gluten-free pizza dough recipe. They are divided into helpful categories based on time it takes to make the doughs, starting with 5 fairly fast doughs, followed by refrigerated doughs that take 24, 48 or 72 hours respectively, followed by a couple naturally-leavened doughs, and then some more specialty doughs. It takes all the confusion and uncertainty out of the process and helps one master the whole world of pizza dough in short order. It starts with recipes that are true to Italian and/or Italian-style pizza. There is a whole chapter dedicated to talking about details for making Great Pizza Crust... an extremely helpful resource... with beautiful photos. This is the most passionate, authentic, helpful, delicious book on pizza I have ever seen!"
"Every pizza book offers something different whether it’s a philosophy on dough, creative toppings or just a good ol’ history lesson. What I really enjoy is that many of the dough recipes are for similar “New York” or “Neapolitan” style but they vary in the amount of time needed to make them. I really enjoyed this section of the book, the insight provided by his visits to some of the best pizza places in Italy is priceless. This book does exclude any major discussion of California or Chicago deep dish style pizza. The eight tips for great crust discuss topics such as hydration, time, temperature, salt, mixing and climate. I followed the instructions closely from mixing, kneading and shaping and the dough stayed pretty sticky the whole time. Mr. Forkish isn’t really scared of adding extra flour to the mix to keep it less sticky but I was tentative due to some previous pizza books I’ve read. After the 2nd fermentation and letting the dough warm up for 90 minutes I found that it was no longer sticky (I increased my extra flour at this point) and it was a pleasure to work with. The author uses a pizza stone or baking steel and utilizes a combo of the oven and broiler in all the recipes. We prepared the pizza on a wooden peel and slid it easily onto the stone (I have had a lot of practice). The tidbits of information that Ken Forkish adds into many sections about hydration, oven temperature and fermentation make this book worth having in my collection."

Find Best Price at Amazon"Having been married to a Danish national for well over a decade now, and having made many annual (and sometimes more often) trips back to her homeland, it was with equal parts curiosity and incredulity that I found myself buying this book. The authenticity is there, and you can tell when you read about things like unscented candles being the status quo, and how the most popular manufacturers don't even offer scented products. Likewise, the references the ubiquitous mid-century light fixtures, advent candles and, most importantly, the predominance of wood furniture over composites or synthetics, all rings true to anyone that has spent any time in Denmark. Another bit that made rang true was discussion of the Danish weather, in particular the fact that some Danes will tell you there are only the gray and green winters. I actually agree on this point, because while it may be a regional thing (I spend most of my time on Fyn (Funen) when in Denmark), nobody and I mean nobody I've ever met would make, much less eat, any of this stuff in order to get their hygge fix. On the other hand, if you're after some deep, PhD dissertation style treatise on the subject of hygge, from the foundations all the way to modern practices and with every aspect beaten to death for 750 pages, then no, this is not the one for you."

"To find out what it's all about I read 'The Little Book of Hygge' by Meik Wiking (pronounced Mike Viking). As Wiking describes it, hygge is 'an atmosphere, an experience' - what we feel when we're with people we love in a warm and comfortable place. For instance, the following would be hyggelig: a small group of friends sitting around a fireplace in a cabin, wearing big jumpers (sweaters) and wooly socks, drinking malt wine. Wiking's suggestions for hyggelig pastimes include things like: spend a weekend in a cabin; have a cooking party with your friends; go out on a rowboat and bring a picnic basket; put couches in your office; have a movie night - with popcorn; go to a hyggelig restaurant and order pickled herring and schnapps; buy confections at a bakery; enjoy exhibitions of Christmas lights; have smorrebrod (an open sandwich on rye bread) with beer or schnapps; read a good book; and so on. For example, here's one: invite a couple of friends over; watch Netlfix; bring in Mexican food; drink sangria....and later on - have chocolate eclairs for dessert. = Hyggelig sounds might be: the crackling of burning wood; the pitter patter of raindrops; and trees waving in the breeze. However, Wiking's numerous suggestions for 'hyggelig experiences' got very repetitive.....and after awhile, it seemed like a lot of padding to have enough words for an entire book."

Many of the recipes also list further variations, such as pan roasted cauliflower...which then shows how to add capers and pine nuts, or spices and pistachios."

Find Best Price at Amazon"My first recipe I made was the easiest thing I could find to jump in, the Coffee Panna Cotta. I made it for company recently bc it turned out great during my test batch. I learned a lot of tidbits of his life story and understand why his tastes in food have developed beyond French cuisine. The recipes are many, and with much variety; so you will find an array of the most recognizable ingredients to a few 'strange' ones as defined by the American commonplace diet. There are many simple seafood, shellfish, recipes that are 10 mins to whip up and the usual suspects, chicken, beef, pork, vegetables, etc...it is common that in the majority of cookbooks out there, you will find some recipes you'll never do while jumping into others. Some simple dessert recipes too...I want to try the brittle using seeds bc my g'daughter is allergic to nuts. Although he says you can use a pot on the stove to make this, he gives instructions to use the microwave to do it, which shows you, he doesn't mind using something that is usually relegated to just heating up tea or water. So many cooks and chefs say NEVER to run them under water, like it's a cardinal sin to do that, subscribing instead to a damp cloth or soft-bristled brush at most. In short, as on his TV series and these books, that is what you get...a straightforward and refreshingly simple approach to food. I made half a recipe using walnuts (I had no pistachios) and chocolate chips and it was so good, easy and fast and ready to eat in about an hour!"

So I was super-excited to see that Kochilas had a new cookbook coming out that focuses on the cuisine of Ikaria, her ancestral homeland and the location of her cooking school Glorious Greek Kitchen. The organic, unprocessed diet of Ikarians, as well as regular physical activity, laid-back attitude, and arguably nonexistent relationship with time (shops around the island read "Clocks, Anxiety and Stress Have No Place on Ikaria") are likely all contributing factors. An entire chapter devoted to using vegetables as a main course includes baked, stewed, braised, and stuffed veggies that will give you plenty of creative ideas for how to make the most of the season's bounty. As a sweet finale, I baked the spice cake for the revealing saint (fanouropita) in a decorative Bundt pan -- it makes the perfect afternoon treat with a cup of Greek coffee.
