Find Best Price at Amazon"My first recipe I made was the easiest thing I could find to jump in, the Coffee Panna Cotta. I made it for company recently bc it turned out great during my test batch. I learned a lot of tidbits of his life story and understand why his tastes in food have developed beyond French cuisine. The recipes are many, and with much variety; so you will find an array of the most recognizable ingredients to a few 'strange' ones as defined by the American commonplace diet. There are many simple seafood, shellfish, recipes that are 10 mins to whip up and the usual suspects, chicken, beef, pork, vegetables, etc...it is common that in the majority of cookbooks out there, you will find some recipes you'll never do while jumping into others. Some simple dessert recipes too...I want to try the brittle using seeds bc my g'daughter is allergic to nuts. Although he says you can use a pot on the stove to make this, he gives instructions to use the microwave to do it, which shows you, he doesn't mind using something that is usually relegated to just heating up tea or water. So many cooks and chefs say NEVER to run them under water, like it's a cardinal sin to do that, subscribing instead to a damp cloth or soft-bristled brush at most. In short, as on his TV series and these books, that is what you get...a straightforward and refreshingly simple approach to food. I made half a recipe using walnuts (I had no pistachios) and chocolate chips and it was so good, easy and fast and ready to eat in about an hour!"

So I was super-excited to see that Kochilas had a new cookbook coming out that focuses on the cuisine of Ikaria, her ancestral homeland and the location of her cooking school Glorious Greek Kitchen. The organic, unprocessed diet of Ikarians, as well as regular physical activity, laid-back attitude, and arguably nonexistent relationship with time (shops around the island read "Clocks, Anxiety and Stress Have No Place on Ikaria") are likely all contributing factors. An entire chapter devoted to using vegetables as a main course includes baked, stewed, braised, and stuffed veggies that will give you plenty of creative ideas for how to make the most of the season's bounty. As a sweet finale, I baked the spice cake for the revealing saint (fanouropita) in a decorative Bundt pan -- it makes the perfect afternoon treat with a cup of Greek coffee. Sprinkled throughout the book are gorgeous portraits of Ikaria's landscape and architecture, Ikarians engaged in daily activities and festivals, and mouthwatering food photography."

Even oligarchs are pining for the mayonnaise-laden salads and kotleti (Russian burgers) of our shared, vanished socialist childhoods. The pioneering Bolsheviks of the 1920s wanted to liberate women from domestic chores—and so both my grandmothers were lousy cooks! But the Bolshevik feminist project failed, and by the next decade, under Stalin, Soviet women got stuck where they remained—carrying the infamous “double-burden” of a job and housework. In a society with so much cultural control, some women of my mother's early 60’s generation found personal self-expression in cooking. Now with the avalanche of chichi prepared food at Russian supermarkets, cooking is strictly a matter of choice. When we completely ran out money Mom would make fried eggs over stale black bread cubes. Each chapter of the book has us obsessing about something different—a new “project.” The sumptuous kulebiaka from the pages of our beloved Chekhov drove us crazy but turned out incredibly. Chanakhi , a Georgian lamb stew with tons of herbs (Stalin's favorite dish incidentally) is something we cook a lot.

Today I made the broccoli chickpea soup as nutritional yeast is always on hand in my pantry, and it was delicious , warm and easy to make; the Creole Corn chowder is next on my list as well as some of the rather delicious looking desserts to serve friends and family over the holidays...only to announce after they were vegan ! Follow up: I seriously doubted I could give up cheese, or that vegan cheese would be that good but just tried making their cashew blue cheese and all I can say is why, I am a convert!"

I've made almost a dozen recipes: the homemade BBQ sauce; green pea guacamole with homemade tortilla chips; baked bean and cornbread casserole; flourless chocolate decadence cake; BBQ jackfruit fajitas; chickpea omelettes; BBQ baked tofu; sweet and sour cauliflower; loaded Mexican baked potatoes; rosemary lemon poundcake; and molasses-hazelnut chocolate mousse tart. Find Best Price at Amazon"Having been married to a Danish national for well over a decade now, and having made many annual (and sometimes more often) trips back to her homeland, it was with equal parts curiosity and incredulity that I found myself buying this book. The authenticity is there, and you can tell when you read about things like unscented candles being the status quo, and how the most popular manufacturers don't even offer scented products. Likewise, the references the ubiquitous mid-century light fixtures, advent candles and, most importantly, the predominance of wood furniture over composites or synthetics, all rings true to anyone that has spent any time in Denmark. Another bit that made rang true was discussion of the Danish weather, in particular the fact that some Danes will tell you there are only the gray and green winters. I actually agree on this point, because while it may be a regional thing (I spend most of my time on Fyn (Funen) when in Denmark), nobody and I mean nobody I've ever met would make, much less eat, any of this stuff in order to get their hygge fix. On the other hand, if you're after some deep, PhD dissertation style treatise on the subject of hygge, from the foundations all the way to modern practices and with every aspect beaten to death for 750 pages, then no, this is not the one for you."

"To find out what it's all about I read 'The Little Book of Hygge' by Meik Wiking (pronounced Mike Viking). As Wiking describes it, hygge is 'an atmosphere, an experience' - what we feel when we're with people we love in a warm and comfortable place. For example, here's one: invite a couple of friends over; watch Netlfix; bring in Mexican food; drink sangria....and later on - have chocolate eclairs for dessert. = Hyggelig sounds might be: the crackling of burning wood; the pitter patter of raindrops; and trees waving in the breeze. However, Wiking's numerous suggestions for 'hyggelig experiences' got very repetitive.....and after awhile, it seemed like a lot of padding to have enough words for an entire book."
