If you leave the thermometer clipped to the edge of the pan, you will never get a really accurate reading for delicate sugar preparations. Just stir the pan really well, submerge the tip of the thermometer in the mixture, making very sure to NOT touch the bottom of the pan(this will cause a false reading, as the bottom of the pan next to the burner will be much hotter than the mixture as a whole), and Voila!, you will have a very precise temp."
